Ripe bananas mixed with oatmeal, flax-seed, quinoa, brown sugar and just a dash of coconut oil makes nutrient dense quinoa banana muffins! Add some chocolate chips to it and you have a decadent dessert. Mmm… delish, not to mention super healthy too! I made some quinoa banana bread last week and thought I would make some muffins this time. Easy to tuck into a lunch box for a quick snack. I cooked the quinoa and added it to the bread. This made the bread very moist. I used one cup oat flour and one cup whole oats. I wanted to give it a grainy texture with oats. I also used coconut oil and flax meal. When the muffins came out of the oven they smelled heavenly and tasted fabulous. My family devoured it which had me grinning from ear to ear. They don’t know all the nutritional junk I put in it ! Bonus, this bread is also vegan and gluten-free!
A note about quinoa
Quinoa is an ancient grain that is becoming hugely popular especially with vegans and those who eat gluten-free. Quinoa provides all 9 essential amino acids, making it a complete protein. Quinoa is a gluten-free and cholesterol-free whole grain and is almost always organic. It is also high in fiber. When cooking quinoa use a proportion of 1:2 quinoas to water. It swells to four times its size when cooked, so 1/4 cup raw quinoa will give you one cup cooked quinoa.
Apart from all the goodness in quinoa, this bread is nutrient dense bursting with healthy fat courtesy of the flax-seed and coconut oil. Flax meal also offers a healthy dose of omega 3 and lignans which protect against cancers. Bananas are high in potassium and B vitamins. Chocolate chips are the icing on the muffin. All in all a healthy slice of bread that is nutrient dense and yummy!
